Bosphorus Seafood Paella (Boğaziçi Deniz Ürünleri Paella)

Ingredients

  • 1/2 lb mussels, cleaned and debearded
  • 1/2 lb calamari, sliced into rings
  • 1/4 cup fresh parsley, chopped
  • Lemon wedges, for serving

Instructions

  1. In a paella pan or large skillet, heat olive oil over medium heat. Add the onion and cook until softened.
  2. Add the garlic, red bell pepper, and tomato. Cook for a few minutes until the vegetables are softened.
  3. Stir in the Arborio rice, saffron, smoked paprika, and cayenne pepper. Cook for 1-2 minutes to toast the rice and spices.
  4. Pour in the seafood or chicken broth and bring to a simmer. Cook for 15-20 minutes, stirring occasionally, until the rice is almost tender and most of the liquid is absorbed.
  5. Add the shrimp, mussels, calamari, and frozen peas. Cover the pan and cook for an additional 5-7 minutes, or until the seafood is cooked through and the mussels have opened.
  6. Remove from heat and let the paella rest for a few minutes. Sprinkle with chopped parsley and serve with lemon wedges.
