Bossam Pork Belly Wraps (보쌈)

Ingredients

  • 3 lbs pork belly
  • 1 cup soybean paste
  • 1/2 cup garlic, minced
  • 1/4 cup ginger, grated
  • 2 tbsp sesame oil
  • 2 tbsp rice wine
  • 1/4 cup green onions, chopped
  • 1 head of lettuce
  • Assorted condiments (kimchi, pickled radish, ssamjang)

Instructions

  1. Rinse the pork belly and place it in a large pot.
  2. Add enough water to cover the pork belly, then bring to a boil over high heat.
  3. Reduce the heat to low, cover, and simmer for 1.5 hours, or until the pork is tender.
  4. While the pork is cooking, prepare the soybean paste mixture by combining the soybean paste, garlic, ginger, sesame oil, rice wine, and green onions in a bowl.
  5. Once the pork is tender, remove it from the pot and let it cool slightly. Then, slice it into thin pieces.
  6. To serve, arrange the pork slices, lettuce leaves, and assorted condiments on a platter. Each person can make their own wraps by placing a piece of pork and condiments in a lettuce leaf, then wrapping it up and enjoying!
