Bossam Pork Belly Wraps (보쌈)

Ingredients
- 3 lbs pork belly
- 1 cup soybean paste
- 1/2 cup garlic, minced
- 1/4 cup ginger, grated
- 2 tbsp sesame oil
- 2 tbsp rice wine
- 1/4 cup green onions, chopped
- 1 head of lettuce
- Assorted condiments (kimchi, pickled radish, ssamjang)
Instructions
- Rinse the pork belly and place it in a large pot.
- Add enough water to cover the pork belly, then bring to a boil over high heat.
- Reduce the heat to low, cover, and simmer for 1.5 hours, or until the pork is tender.
- While the pork is cooking, prepare the soybean paste mixture by combining the soybean paste, garlic, ginger, sesame oil, rice wine, and green onions in a bowl.
- Once the pork is tender, remove it from the pot and let it cool slightly. Then, slice it into thin pieces.
- To serve, arrange the pork slices, lettuce leaves, and assorted condiments on a platter. Each person can make their own wraps by placing a piece of pork and condiments in a lettuce leaf, then wrapping it up and enjoying!
