Bot chien is a popular Vietnamese street food made with crispy and chewy rice cakes stir-fried with eggs and green onions, then served with a tangy and savory dipping sauce.

Ingredients

  • 300g rice cakes, cut into bite-sized pieces
  • 2 eggs
  • 2 green onions, chopped
  • 3 tbsp cooking oil
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 1/4 cup sugar
  • 1/4 cup water

Instructions

  1. Heat 2 tbsp of cooking oil in a pan over medium-high heat.
  2. Add the rice cakes and stir-fry for 5-7 minutes until crispy.
  3. Push the rice cakes to one side of the pan and add 1 tbsp of cooking oil to the empty side.
  4. Crack the eggs into the empty side and scramble until cooked.
  5. Combine the eggs with the rice cakes, then add the chopped green onions and stir-fry for another 2 minutes.
  6. In a small bowl, mix together the soy sauce, vinegar, sugar, and water to make the dipping sauce.
  7. Serve the bot chien hot with the dipping sauce on the side.
