Bot Chien
Bot chien is a popular Vietnamese street food made with crispy and chewy rice cakes stir-fried with eggs and green onions, then served with a tangy and savory dipping sauce.
Ingredients
- 300g rice cakes, cut into bite-sized pieces
- 2 eggs
- 2 green onions, chopped
- 3 tbsp cooking oil
- 1/4 cup soy sauce
- 1/4 cup vinegar
- 1/4 cup sugar
- 1/4 cup water
Instructions
- Heat 2 tbsp of cooking oil in a pan over medium-high heat.
- Add the rice cakes and stir-fry for 5-7 minutes until crispy.
- Push the rice cakes to one side of the pan and add 1 tbsp of cooking oil to the empty side.
- Crack the eggs into the empty side and scramble until cooked.
- Combine the eggs with the rice cakes, then add the chopped green onions and stir-fry for another 2 minutes.
- In a small bowl, mix together the soy sauce, vinegar, sugar, and water to make the dipping sauce.
- Serve the bot chien hot with the dipping sauce on the side.
