Bouchée à la Reine (Queen's Bite)

Ingredients

  • 1 sheet of puff pastry
  • 1 cup cooked chicken, diced
  • 1/2 cup mushrooms, sliced
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry and cut it into 6 equal squares. Place the squares on a baking sheet and bake for 15 minutes or until golden brown.
  3. In a saucepan, melt the butter over medium heat. Add the mushrooms and cook until softened.
  4. Stir in the flour and cook for 1-2 minutes to make a roux.
  5. Gradually whisk in the chicken broth and bring the mixture to a simmer. Cook for 5 minutes, stirring constantly, until the sauce thickens.
  6. Stir in the cooked chicken and heavy cream. Season with salt and pepper to taste.
  7. Remove the puff pastry squares from the oven and carefully cut off the top third of each square to create a lid. Scoop out any soft pastry from the inside to create a shell.
  8. Divide the chicken and mushroom filling among the pastry shells. Place the lids on top.
  9. Return the filled pastries to the oven and bake for an additional 10 minutes.
  10. Serve hot and enjoy!
