Boudin King Cake

Ingredients
- 1 pound Cajun boudin sausage
- 2 sheets puff pastry
- 1 egg, beaten (for egg wash)
- Green, purple, and yellow food coloring
- Colored sugar crystals
Instructions
- Preheat the oven to 375°F (190°C).
- Remove the boudin from its casing and cook in a skillet over medium heat until fully cooked. Let it cool.
- Roll out the puff pastry sheets and cut each into a large oval shape.
- Place half of the cooked boudin down the center of each pastry oval.
- Roll up the pastry around the boudin, pinching the edges to seal.
- Form the pastry into a ring shape and place on a baking sheet.
- Brush the pastry with the beaten egg and bake for 25-30 minutes, or until golden brown.
- Once the pastry has cooled, divide it into three sections and color each section with green, purple, and yellow food coloring.
