Ingredients

  • 1 pound Cajun boudin sausage
  • 2 sheets puff pastry
  • 1 egg, beaten (for egg wash)
  • Green, purple, and yellow food coloring
  • Colored sugar crystals

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Remove the boudin from its casing and cook in a skillet over medium heat until fully cooked. Let it cool.
  3. Roll out the puff pastry sheets and cut each into a large oval shape.
  4. Place half of the cooked boudin down the center of each pastry oval.
  5. Roll up the pastry around the boudin, pinching the edges to seal.
  6. Form the pastry into a ring shape and place on a baking sheet.
  7. Brush the pastry with the beaten egg and bake for 25-30 minutes, or until golden brown.
  8. Once the pastry has cooled, divide it into three sections and color each section with green, purple, and yellow food coloring.
  9. Sprinkle colored sugar crystals over the top of the pastry to create a festive Mardi Gras look.
