Bouillon Crabe, also known as Mauritian Crab Soup, is a popular dish in Mauritian cuisine. This flavorful and aromatic soup is a perfect blend of spices and fresh crab, making it a delightful and comforting meal.
Ingredients
- 1 kg fresh crab, cleaned and cracked
- 2 onions, finely chopped
- 3 tomatoes, diced
- 3 garlic cloves, minced
- 1-inch ginger, grated
- 2 green chilies, sliced
- 1 tsp turmeric powder
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp garam masala
- 1 liter water
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat some oil in a large pot and add the cumin seeds. Once they start to sizzle, add the onions and sauté until golden brown.
- Add the garlic, ginger, and green chilies. Sauté for a few minutes.
- Stir in the turmeric, coriander powder, and garam masala. Cook for 2 minutes.
- Add the diced tomatoes and cook until they soften.
- Pour in the water and bring the broth to a boil.
- Add the cleaned and cracked crab to the pot. Season with salt and let it simmer for 20-25 minutes.
- Garnish with fresh coriander leaves before serving.
