Ingredients

  • 1 lb saltfish, soaked and flaked
  • 1 onion, finely chopped
  • 1 bell pepper, finely chopped
  • 2 tomatoes, finely chopped
  • 2 cloves garlic, minced
  • 1 hot pepper, finely chopped
  • 2 tbsp olive oil
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh chives, chopped
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the onion, bell pepper, tomatoes, garlic, and hot pepper. Sauté until the vegetables are soft.
  3. Add the flaked saltfish to the skillet and cook for 5-7 minutes, stirring occasionally.
  4. Season with salt and pepper to taste.
  5. Remove from heat and stir in the fresh parsley and chives.
  6. Serve hot with bread or bakes.
