Bouillon (saltfish Buljol)
Bouillon, also known as Saltfish Buljol, is a traditional dish from Saint Lucia that is packed with flavor and is perfect for breakfast or brunch.
Ingredients
- 1 lb saltfish, soaked and flaked
- 1 onion, finely chopped
- 1 bell pepper, finely chopped
- 2 tomatoes, finely chopped
- 2 cloves garlic, minced
- 1 hot pepper, finely chopped
- 2 tbsp olive oil
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh chives, chopped
- Salt and pepper to taste
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the onion, bell pepper, tomatoes, garlic, and hot pepper. Sauté until the vegetables are soft.
- Add the flaked saltfish to the skillet and cook for 5-7 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Remove from heat and stir in the fresh parsley and chives.
- Serve hot with bread or bakes.
