Ingredients

  • 3 cups cooked rice
  • 1/2 cup bread crumbs
  • 1/4 cup grated cheese
  • 1/4 cup finely chopped onions
  • 1/4 cup finely chopped bell peppers
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 2 eggs, beaten
  • 1/4 cup vegetable oil for frying

Instructions

  1. In a large bowl, mix together the cooked rice, bread crumbs, grated cheese, onions, bell peppers, garlic powder, and paprika.
  2. Form the mixture into golf ball-sized balls and dip each ball into the beaten eggs, then roll in bread crumbs to coat.
  3. In a large skillet, heat the vegetable oil over medium heat. Fry the rice balls in batches until golden brown and crispy, about 3-4 minutes per side.
  4. Remove the fried rice balls from the skillet and place them on a paper towel-lined plate to drain excess oil.
  5. Serve the Boules de Riz hot and crispy.
