Ingredients

  • 1 package (17.3 ounces) puff pastry, thawed
  • 1 cup feta cheese, crumbled
  • 1 cup spinach, chopped
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the puff pastry and cut it into 24 squares.
  3. In a bowl, mix the feta cheese and chopped spinach.
  4. Place a spoonful of the feta and spinach mixture onto each puff pastry square.
  5. Brush the edges of the pastry with the beaten egg, then fold the pastry over the filling to form a triangle and press the edges to seal.
  6. Place the bourekas bites on a baking sheet lined with parchment paper, brush the tops with the beaten egg, and bake for 20-25 minutes or until golden brown.
  7. Remove from the oven and let cool slightly before serving.
