Bourekia Bonanza

Ingredients

  • 500g phyllo pastry sheets
  • 250g halloumi cheese, grated
  • 100g feta cheese, crumbled
  • 1/4 cup fresh mint, chopped
  • 1 egg, beaten
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix together the halloumi, feta, mint, and beaten egg. Season with salt and pepper.
  3. Place a phyllo pastry sheet on a clean surface and brush it lightly with olive oil.
  4. Place a spoonful of the cheese mixture at the bottom of the pastry sheet and fold the sides over the filling, then roll it up to form a parcel.
  5. Repeat with the remaining pastry sheets and filling.
  6. Place the bourekia on a baking sheet, brush the tops with olive oil, and bake for 20 minutes or until golden brown.
  7. Remove from the oven and let them cool for a few minutes before serving.
