Bourekia Bonanza
Bourekia Bonanza is a traditional Cypriot dish that consists of delicious pastry parcels filled with a savory cheese and mint mixture. This recipe is perfect for a special occasion or as a tasty snack.
Ingredients
- 500g phyllo pastry sheets
- 250g halloumi cheese, grated
- 100g feta cheese, crumbled
- 1/4 cup fresh mint, chopped
- 1 egg, beaten
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 180°C (350°F).
- In a bowl, mix together the halloumi, feta, mint, and beaten egg. Season with salt and pepper.
- Place a phyllo pastry sheet on a clean surface and brush it lightly with olive oil.
- Place a spoonful of the cheese mixture at the bottom of the pastry sheet and fold the sides over the filling, then roll it up to form a parcel.
- Repeat with the remaining pastry sheets and filling.
- Place the bourekia on a baking sheet, brush the tops with olive oil, and bake for 20 minutes or until golden brown.
- Remove from the oven and let them cool for a few minutes before serving.
