Bourtheto (seafood Stuffed Peppers)
Bourtheto is a traditional dish from the Ionian Islands, known for its rich flavors and seafood-filled peppers. This recipe combines the freshness of the sea with the warmth of Mediterranean spices, creating a delightful and aromatic dish.
Ingredients
- 4 large bell peppers
- 1 lb mixed seafood (shrimp, squid, and fish)
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 1/2 cup white wine
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp red pepper flakes
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
- Add the mixed seafood to the skillet and cook for 2-3 minutes.
- Stir in the diced tomatoes, white wine, paprika, red pepper flakes, salt, and pepper. Simmer for 5 minutes.
- Stuff the bell peppers with the seafood mixture and place them in a baking dish.
- Bake for 30-35 minutes, until the peppers are tender and the filling is cooked through.
- Serve the bourtheto hot, garnished with fresh herbs if desired.
