Bourtheto (seafood Stuffed Peppers)

Ingredients

  • 4 large bell peppers
  • 1 lb mixed seafood (shrimp, squid, and fish)
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup white wine
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
  4. Add the mixed seafood to the skillet and cook for 2-3 minutes.
  5. Stir in the diced tomatoes, white wine, paprika, red pepper flakes, salt, and pepper. Simmer for 5 minutes.
  6. Stuff the bell peppers with the seafood mixture and place them in a baking dish.
  7. Bake for 30-35 minutes, until the peppers are tender and the filling is cooked through.
  8. Serve the bourtheto hot, garnished with fresh herbs if desired.
