Ingredients

  • 2 lbs beef stew meat, cut into chunks
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 bell pepper, chopped
  • 1 scotch bonnet pepper, whole (optional for heat)
  • 2 tsp thyme
  • 2 tsp parsley
  • 1 tsp cloves
  • 1 tsp allspice
  • Salt and pepper to taste
  • 6 cups beef broth

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the beef stew meat and brown on all sides.
  2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  3. Stir in the carrots, potatoes, bell pepper, and whole scotch bonnet pepper (if using).
  4. Season the mixture with thyme, parsley, cloves, allspice, salt, and pepper. Stir well to combine.
  5. Pour in the beef broth and bring the stew to a boil. Reduce the heat to low, cover, and simmer for 2 hours, or until the beef is tender.
  6. Discard the whole scotch bonnet pepper before serving. Adjust seasoning if needed.
