Bouyon Bef is a traditional Haitian beef stew that is hearty, flavorful, and perfect for a comforting meal. This stew is packed with tender beef, vegetables, and aromatic spices, making it a delicious and satisfying dish.
Ingredients
- 2 lbs beef stew meat, cut into chunks
- 2 tbsp vegetable oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 bell pepper, chopped
- 1 scotch bonnet pepper, whole (optional for heat)
- 2 tsp thyme
- 2 tsp parsley
- 1 tsp cloves
- 1 tsp allspice
- Salt and pepper to taste
- 6 cups beef broth
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the beef stew meat and brown on all sides.
- Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
- Stir in the carrots, potatoes, bell pepper, and whole scotch bonnet pepper (if using).
- Season the mixture with thyme, parsley, cloves, allspice, salt, and pepper. Stir well to combine.
- Pour in the beef broth and bring the stew to a boil. Reduce the heat to low, cover, and simmer for 2 hours, or until the beef is tender.
- Discard the whole scotch bonnet pepper before serving. Adjust seasoning if needed.
