Ingredients

  • 1 bell pepper, chopped
  • 1 scotch bonnet pepper, whole
  • 1 cup coconut milk
  • 6 cups water
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the water to a boil.
  2. Add the saltfish, green bananas, onion, tomatoes, garlic, bell pepper, and scotch bonnet pepper to the pot.
  3. Simmer for 30-40 minutes, or until the green bananas are tender.
  4. Stir in the coconut milk and season with salt and pepper to taste.
  5. Simmer for an additional 10 minutes to allow the flavors to meld together.
  6. Remove the scotch bonnet pepper before serving.
