Ingredients
- 1 lb saltfish, soaked and flaked
- 6 green bananas, peeled and sliced

- 1 scotch bonnet pepper, whole
- 1 cup coconut milk
- 6 cups water
- Salt and pepper to taste
Instructions
- In a large pot, bring the water to a boil.
- Add the saltfish, green bananas, onion, tomatoes, garlic, bell pepper, and scotch bonnet pepper to the pot.
- Simmer for 30-40 minutes, or until the green bananas are tender.
- Stir in the coconut milk and season with salt and pepper to taste.
- Simmer for an additional 10 minutes to allow the flavors to meld together.
- Remove the scotch bonnet pepper before serving.
