Bovec Wild Mushroom and Barley Soup (Bovška Divja Gobova in Ječmenova Juha)
Bovška Divja Gobova in Ječmenova Juha, or Bovec Wild Mushroom and Barley Soup, is a traditional Slovenian dish that is hearty, flavorful, and perfect for a cozy meal on a chilly day.
Ingredients
- 500g wild mushrooms, cleaned and sliced
- 1 onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup barley
- 6 cups vegetable broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions, carrots, and celery, and sauté until the vegetables are soft, about 5 minutes.
- Add the sliced mushrooms to the pot and cook until they release their liquid and start to brown, about 10 minutes.
- Stir in the barley and vegetable broth. Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 45-50 minutes, or until the barley is tender.
- Season the soup with salt and pepper to taste. Serve hot and enjoy!
