Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 quetzal breast, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tomato, diced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse the quinoa under cold water and drain.
  2. In a pot, bring 2 cups of water to a boil. Add the quinoa, cover, and simmer for 15 minutes or until the water is absorbed. Fluff with a fork and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced quetzal breast and cook until browned.
  4. Add the chopped onion, minced garlic, diced bell pepper, and tomato to the skillet. Cook until the vegetables are tender.
  5. Stir in the cooked quinoa, cumin, paprika, salt, and pepper. Cook for an additional 5 minutes, stirring occasionally.
  6. Remove from heat and serve the Quetzal Quinoa Bowl hot.
