Ingredients
- 1 cup quinoa
- 2 cups water
- 1 quetzal breast, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 tomato, diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Rinse the quinoa under cold water and drain.
- In a pot, bring 2 cups of water to a boil. Add the quinoa, cover, and simmer for 15 minutes or until the water is absorbed. Fluff with a fork and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced quetzal breast and cook until browned.
- Add the chopped onion, minced garlic, diced bell pepper, and tomato to the skillet. Cook until the vegetables are tender.
- Stir in the cooked quinoa, cumin, paprika, salt, and pepper. Cook for an additional 5 minutes, stirring occasionally.
- Remove from heat and serve the Quetzal Quinoa Bowl hot.
