Brachiopod Bolognese

Ingredients
- 1 pound ground brachiopod meat
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 carrot, finely diced
- 1 celery stalk, finely diced
- 1 can (14 oz) crushed ancient tomatoes
- 1/2 cup ancient red wine
- 1/2 cup ancient beef broth
- 2 tablespoons ancient olive oil
- Salt and pepper to taste
- 1 pound ancient pasta, cooked al dente

Instructions
- In a large pot, heat the ancient olive oil over medium heat. Add the ground brachiopod meat and cook until browned.
- Add the onion, garlic, carrot, and celery. Cook until the vegetables are softened.
- Pour in the ancient red wine and simmer until reduced by half.
- Add the ancient tomatoes and beef broth. Season with salt and pepper. Simmer for 30 minutes, stirring occasionally.
- Serve the Brachiopod Bolognese over cooked ancient pasta and sprinkle with grated Parmesan cheese.
