Braised Beef Cheeks with Red Wine Reduction (Carrilleras de Ternera con Reducción de Vino)

Ingredients

  • 1 kg beef cheeks, trimmed
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 garlic cloves, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Season the beef cheeks with salt and pepper.
  2. Heat olive oil in a large pot over medium-high heat. Brown the beef cheeks on all sides. Remove and set aside.
  3. Add the chopped onion, carrots, and garlic to the pot. Cook until softened.
  4. Pour in the red wine and beef broth. Add the bay leaves and return the beef cheeks to the pot.
  5. Bring to a boil, then reduce the heat to low. Cover and simmer for 3 hours, or until the beef cheeks are tender.
  6. Remove the beef cheeks from the pot and set aside. Strain the cooking liquid and return it to the pot.
  7. Simmer the liquid over medium heat until it reduces and thickens to a sauce-like consistency.
  8. Return the beef cheeks to the pot to coat them with the red wine reduction.
  9. Serve the braised beef cheeks with the red wine reduction sauce.
