Ingredients
- 1 kg beef cheeks, trimmed
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 garlic cloves, minced
- 2 cups red wine
- 2 cups beef broth
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Season the beef cheeks with salt and pepper.
- Heat olive oil in a large pot over medium-high heat. Brown the beef cheeks on all sides. Remove and set aside.
- Add the chopped onion, carrots, and garlic to the pot. Cook until softened.
- Pour in the red wine and beef broth. Add the bay leaves and return the beef cheeks to the pot.
- Bring to a boil, then reduce the heat to low. Cover and simmer for 3 hours, or until the beef cheeks are tender.
- Remove the beef cheeks from the pot and set aside. Strain the cooking liquid and return it to the pot.
- Simmer the liquid over medium heat until it reduces and thickens to a sauce-like consistency.
- Return the beef cheeks to the pot to coat them with the red wine reduction.
- Serve the braised beef cheeks with the red wine reduction sauce.
