Ingredients
- 1.5 lbs beef shank, cut into chunks
- 5 slices ginger
- 4 green onions, cut into 2-inch pieces
- 1 onion, sliced
- 4 cloves garlic, minced
- 2 star anise
- 1 cinnamon stick
- 1 tsp Sichuan peppercorns
- 1/3 cup soy sauce
- 1/4 cup rice wine
- 1 tbsp rock sugar
- 8 cups beef broth
- 12 oz dried wheat noodles
- Salt, to taste
Instructions
- In a large pot, blanch the beef shank in boiling water for 5 minutes. Remove and rinse under cold water.
- Heat some oil in the pot and sauté the ginger, green onions, onion, and garlic until fragrant.
- Add the beef shank, star anise, cinnamon stick, and Sichuan peppercorns. Stir in the soy sauce, rice wine, and rock sugar.
- Pour in the beef broth and bring to a boil. Reduce heat, cover, and simmer for 1.5 to 2 hours until the beef is tender.
- Cook the noodles according to the package instructions.
- To serve, place a portion of noodles in a bowl, ladle the braised beef and broth over the noodles, and garnish with green onions.
