Ingredients

  • 1.5 lbs beef shank, cut into chunks
  • 5 slices ginger
  • 4 green onions, cut into 2-inch pieces
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 2 star anise
  • 1 cinnamon stick
  • 1 tsp Sichuan peppercorns
  • 1/3 cup soy sauce
  • 1/4 cup rice wine
  • 1 tbsp rock sugar
  • 8 cups beef broth
  • 12 oz dried wheat noodles
  • Salt, to taste

Instructions

  1. In a large pot, blanch the beef shank in boiling water for 5 minutes. Remove and rinse under cold water.
  2. Heat some oil in the pot and sauté the ginger, green onions, onion, and garlic until fragrant.
  3. Add the beef shank, star anise, cinnamon stick, and Sichuan peppercorns. Stir in the soy sauce, rice wine, and rock sugar.
  4. Pour in the beef broth and bring to a boil. Reduce heat, cover, and simmer for 1.5 to 2 hours until the beef is tender.
  5. Cook the noodles according to the package instructions.
  6. To serve, place a portion of noodles in a bowl, ladle the braised beef and broth over the noodles, and garnish with green onions.
