红烧牛肉面 (Braised Beef Noodles) is a classic dish from Hubei Cuisine, known for its rich and savory flavors. This hearty noodle soup is perfect for a comforting meal, especially during the colder months.
Ingredients
- 500g beef brisket, cut into chunks
- 4 slices of ginger
- 3 cloves of garlic, minced
- 2 green onions, cut into 2-inch pieces
- 3 star anise
- 2 cinnamon sticks
- 1 tablespoon Sichuan peppercorns
- 1/4 cup soy sauce
- 2 tablespoons dark soy sauce
- 2 tablespoons Shaoxing wine
- 1 tablespoon sugar
- Salt, to taste
- 400g fresh noodles
- 4 cups beef broth
Instructions
- In a large pot, blanch the beef brisket in boiling water for 5 minutes. Drain and set aside.
- Heat some oil in the pot and sauté the ginger, garlic, and green onions until fragrant.
- Add the blanched beef brisket back into the pot, along with star anise, cinnamon sticks, and Sichuan peppercorns. Stir-fry for a few minutes.
- Pour in the soy sauce, dark soy sauce, and Shaoxing wine. Add sugar and salt to taste. Stir well.
- Pour in the beef broth and bring the mixture to a boil. Then reduce the heat, cover, and simmer for 1.5 to 2 hours until the beef is tender.
- Cook the fresh noodles according to the package instructions.
- To serve, place a portion of noodles in a bowl and ladle the braised beef and broth over the noodles.
