Braised Beef Noodles (红烧牛肉面)

Ingredients

  • 500g beef brisket, cut into chunks
  • 4 slices of ginger
  • 3 cloves of garlic, minced
  • 2 green onions, cut into 2-inch pieces
  • 3 star anise
  • 2 cinnamon sticks
  • 1 tablespoon Sichuan peppercorns
  • 1/4 cup soy sauce
  • 2 tablespoons dark soy sauce
  • 2 tablespoons Shaoxing wine
  • 1 tablespoon sugar
  • Salt, to taste
  • 400g fresh noodles
  • 4 cups beef broth

Instructions

  1. In a large pot, blanch the beef brisket in boiling water for 5 minutes. Drain and set aside.
  2. Heat some oil in the pot and sauté the ginger, garlic, and green onions until fragrant.
  3. Add the blanched beef brisket back into the pot, along with star anise, cinnamon sticks, and Sichuan peppercorns. Stir-fry for a few minutes.
  4. Pour in the soy sauce, dark soy sauce, and Shaoxing wine. Add sugar and salt to taste. Stir well.
  5. Pour in the beef broth and bring the mixture to a boil. Then reduce the heat, cover, and simmer for 1.5 to 2 hours until the beef is tender.
  6. Cook the fresh noodles according to the package instructions.
  7. To serve, place a portion of noodles in a bowl and ladle the braised beef and broth over the noodles.
