Ingredients

  • 1 lb beef brisket, cut into chunks
  • 4 cups beef broth
  • 3 tbsp soy sauce
  • 2 tbsp Shaoxing wine
  • 2 tbsp brown sugar
  • 4 slices ginger
  • 2 star anise
  • 2 cinnamon sticks
  • 1 tsp Sichuan peppercorns
  • 8 oz fresh noodles
  • Green onions, sliced, for garnish

Instructions

  1. In a large pot, brown the beef chunks over medium heat.
  2. Add the beef broth, soy sauce, Shaoxing wine, brown sugar, ginger, star anise, cinnamon sticks, and Sichuan peppercorns to the pot.
  3. Simmer the beef mixture over low heat for 1.5 hours, until the beef is tender.
  4. Cook the fresh noodles according to package instructions.
  5. Divide the cooked noodles into serving bowls and ladle the braised beef and broth over the noodles.
  6. Garnish with sliced green onions and serve hot.
