Braised Chicken Feet with Brown Sauce (红烧凤爪)

Ingredients

  • 500g chicken feet
  • 2 slices of ginger
  • 2 cloves of garlic
  • 2 green onions
  • 1 tablespoon cooking oil
  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon sugar
  • 1 star anise
  • 1 cinnamon stick
  • 1 teaspoon Sichuan peppercorns
  • 1 cup water

Instructions

  1. Wash the chicken feet and trim off the nails. Blanch in boiling water for 5 minutes, then drain and set aside.
  2. Heat the cooking oil in a wok or deep skillet over medium heat. Add the ginger, garlic, and green onions, and stir-fry until fragrant.
  3. Add the blanched chicken feet to the wok, and stir-fry for 5 minutes.
  4. Pour in the soy sauce, dark soy sauce, and sugar. Stir well to coat the chicken feet.
  5. Add the star anise, cinnamon stick, and Sichuan peppercorns. Stir in the water.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1 hour, or until the chicken feet are tender.
  7. Uncover the wok and continue to cook until the sauce thickens.
  8. Transfer the braised chicken feet to a serving plate and garnish with chopped green onions, if desired.
