Braised Chicken Feet with Soy Sauce (Hóngshāo Jīzǔ)

Ingredients

  • 500g chicken feet
  • 3 slices ginger
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 1 star anise
  • 1 cinnamon stick
  • 3 tablespoons soy sauce
  • 2 tablespoons sugar
  • 1 tablespoon Shaoxing wine
  • 1 teaspoon Sichuan peppercorns
  • 1 teaspoon chili flakes
  • 1 cup water

Instructions

  1. In a pot of boiling water, blanch the chicken feet for 5 minutes. Drain and set aside.
  2. In a separate pot, heat some oil and sauté the ginger, garlic, and green onions until fragrant.
  3. Add the blanched chicken feet, star anise, and cinnamon stick to the pot.
  4. Pour in the soy sauce, sugar, Shaoxing wine, Sichuan peppercorns, and chili flakes. Stir to coat the chicken feet.
  5. Add water to the pot, cover, and simmer for 1 hour, or until the chicken feet are tender.
  6. Once the chicken feet are tender, uncover the pot and continue to simmer until the sauce thickens.
  7. Serve the Hóngshāo Jīzǔ hot, garnished with chopped green onions.
