Ingredients
- 4 chicken thighs, bone-in and skin-on
- 8 dried shiitake mushrooms, soaked and sliced
- 1 onion, sliced
- 3 cloves garlic, minced

- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon sugar
- 1 teaspoon sesame oil
- 2 green onions, chopped (for garnish)
Instructions
- In a large pot, heat some oil over medium heat. Add the onion, garlic, and ginger, and sauté until fragrant.
- Add the chicken thighs to the pot and brown on both sides.
- Pour in the chicken broth, soy sauce, oyster sauce, and sugar. Stir to combine.
- Add the shiitake mushrooms to the pot and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and simmer for 45-50 minutes, or until the chicken is tender.
- Stir in the sesame oil and adjust seasoning if needed.
- Garnish with chopped green onions before serving.
