Ingredients

  • 4 chicken thighs, bone-in and skin-on

  • 1 tablespoon ginger, minced
  • 2 cups chicken broth
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sugar
  • 1 teaspoon sesame oil
  • 2 green onions, chopped (for garnish)

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion, garlic, and ginger, and sauté until fragrant.
  2. Add the chicken thighs to the pot and brown on both sides.
  3. Pour in the chicken broth, soy sauce, oyster sauce, and sugar. Stir to combine.
  4. Add the shiitake mushrooms to the pot and bring the mixture to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 45-50 minutes, or until the chicken is tender.
  6. Stir in the sesame oil and adjust seasoning if needed.
  7. Garnish with chopped green onions before serving.
