Braised Duck Gizzards with Soy Sauce (红烧鸭胗)

Ingredients

  • 1 lb duck gizzards, cleaned and trimmed
  • 3 slices ginger
  • 2 cloves garlic, minced
  • 2 green onions, cut into 2-inch pieces
  • 1 star anise
  • 1 cinnamon stick
  • 3 tbsp soy sauce
  • 2 tbsp Shaoxing wine
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 2 cups water

Instructions

  1. In a pot, blanch the duck gizzards in boiling water for 5 minutes. Remove and rinse under cold water.
  2. Heat some oil in a wok or pot over medium heat. Add ginger, garlic, and green onions. Stir-fry until fragrant.
  3. Add the blanched duck gizzards, star anise, and cinnamon stick to the wok. Stir-fry for 2 minutes.
  4. Pour in the soy sauce, Shaoxing wine, sugar, salt, and water. Bring to a boil, then reduce heat to low and simmer for 1 hour, or until the gizzards are tender.
  5. Once the gizzards are tender, turn up the heat to reduce the sauce until it thickens.
  6. Remove the star anise and cinnamon stick before serving.
