Braised Duck Gizzards with Soy Sauce (红烧鸭胗)
红烧鸭胗 (Braised Duck Gizzards with Soy Sauce) is a classic Jiangsu Cuisine dish that features tender duck gizzards braised in a savory soy sauce-based broth. This dish is full of rich flavors and is perfect for a comforting home-cooked meal.
Ingredients
- 1 lb duck gizzards, cleaned and trimmed
- 3 slices ginger
- 2 cloves garlic, minced
- 2 green onions, cut into 2-inch pieces
- 1 star anise
- 1 cinnamon stick
- 3 tbsp soy sauce
- 2 tbsp Shaoxing wine
- 1 tbsp sugar
- 1/2 tsp salt
- 2 cups water
Instructions
- In a pot, blanch the duck gizzards in boiling water for 5 minutes. Remove and rinse under cold water.
- Heat some oil in a wok or pot over medium heat. Add ginger, garlic, and green onions. Stir-fry until fragrant.
- Add the blanched duck gizzards, star anise, and cinnamon stick to the wok. Stir-fry for 2 minutes.
- Pour in the soy sauce, Shaoxing wine, sugar, salt, and water. Bring to a boil, then reduce heat to low and simmer for 1 hour, or until the gizzards are tender.
- Once the gizzards are tender, turn up the heat to reduce the sauce until it thickens.
- Remove the star anise and cinnamon stick before serving.
