Ingredients
- 1 whole duck, cut into pieces
- 4 tbsp tamarind pulp
- 4 cups water
- 3 tbsp oil
- 4 shallots, thinly sliced
- 3 cloves garlic, minced
- 2 stalks lemongrass, smashed
- 3 red chilies, sliced
- 1 tsp ground coriander
- 1 tsp ground turmeric
- 2 tbsp palm sugar
- Salt to taste
Instructions
- In a bowl, soak the tamarind pulp in water for 15 minutes. Squeeze the pulp to extract the juice, then strain and set aside.
- Heat oil in a large pot over medium heat. Add the shallots, garlic, lemongrass, and chilies. Sauté until fragrant.
- Add the duck pieces and cook until browned.
- Stir in the ground coriander and turmeric, then pour in the tamarind juice and palm sugar. Season with salt.
- Bring to a boil, then reduce the heat and simmer for 1.5 to 2 hours, or until the duck is tender and the sauce has thickened.
- Serve the braised duck hot with steamed rice.
