Ingredients

  • 1 whole duck, cut into pieces
  • 4 tbsp tamarind pulp
  • 4 cups water
  • 3 tbsp oil
  • 4 shallots, thinly sliced
  • 3 cloves garlic, minced
  • 2 stalks lemongrass, smashed
  • 3 red chilies, sliced
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 2 tbsp palm sugar
  • Salt to taste

Instructions

  1. In a bowl, soak the tamarind pulp in water for 15 minutes. Squeeze the pulp to extract the juice, then strain and set aside.
  2. Heat oil in a large pot over medium heat. Add the shallots, garlic, lemongrass, and chilies. Sauté until fragrant.
  3. Add the duck pieces and cook until browned.
  4. Stir in the ground coriander and turmeric, then pour in the tamarind juice and palm sugar. Season with salt.
  5. Bring to a boil, then reduce the heat and simmer for 1.5 to 2 hours, or until the duck is tender and the sauce has thickened.
  6. Serve the braised duck hot with steamed rice.
