Ingredients
- 1 whole duck, chopped into pieces
- 10 dried shiitake mushrooms, soaked in water
- 3 slices of ginger
- 3 cloves of garlic, minced
- 2 green onions, chopped
- 1 tablespoon cooking oil
- 3 cups chicken broth
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon dark soy sauce
- 1 tablespoon sugar
- 1 star anise
- 1 cinnamon stick
- Salt and pepper to taste
Instructions
- Heat the cooking oil in a large pot over medium heat. Add the ginger, garlic, and green onions. Sauté until fragrant.
- Add the duck pieces and brown on all sides.
- Stir in the soy sauce, oyster sauce, dark soy sauce, and sugar. Mix well.
- Pour in the chicken broth and add the soaked shiitake mushrooms, star anise, and cinnamon stick.
- Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours, or until the duck is tender.
- Season with salt and pepper to taste.
- Serve the braised duck with mushrooms hot, garnished with chopped green onions.
