Ingredients

  • 1 whole duck, chopped into pieces
  • 10 dried shiitake mushrooms, soaked in water
  • 3 slices of ginger
  • 3 cloves of garlic, minced
  • 2 green onions, chopped
  • 1 tablespoon cooking oil
  • 3 cups chicken broth
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon sugar
  • 1 star anise
  • 1 cinnamon stick
  • Salt and pepper to taste

Instructions

  1. Heat the cooking oil in a large pot over medium heat. Add the ginger, garlic, and green onions. Sauté until fragrant.
  2. Add the duck pieces and brown on all sides.
  3. Stir in the soy sauce, oyster sauce, dark soy sauce, and sugar. Mix well.
  4. Pour in the chicken broth and add the soaked shiitake mushrooms, star anise, and cinnamon stick.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours, or until the duck is tender.
  6. Season with salt and pepper to taste.
  7. Serve the braised duck with mushrooms hot, garnished with chopped green onions.
