Braised Duck with Soy Sauce (Hóngshāo Yā)

Ingredients

  • 1 whole duck, about 4-5 pounds, chopped into pieces
  • 1/2 cup soy sauce
  • 1/4 cup Shaoxing wine
  • 3 tbsp sugar
  • 4 slices ginger
  • 4 cloves garlic, minced
  • 2 star anise
  • 2 cinnamon sticks
  • 3 cups water
  • Green onions, chopped, for garnish

Instructions

  1. Heat a large pot over medium heat. Add the duck pieces and cook until browned on all sides.
  2. Add the soy sauce, Shaoxing wine, sugar, ginger, garlic, star anise, and cinnamon sticks to the pot. Stir to combine.
  3. Pour in the water and bring the mixture to a boil. Reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the duck is tender.
  4. Once the duck is cooked, remove the lid and allow the sauce to thicken for a few minutes.
  5. Transfer the braised duck to a serving dish, garnish with chopped green onions, and serve hot.
