Hóngshāo Yā, or Braised Duck with Soy Sauce, is a classic dish in Tianjin Cuisine. The duck is braised in a savory and aromatic soy sauce-based mixture, resulting in tender and flavorful meat.
Ingredients
- 1 whole duck, about 4-5 pounds, chopped into pieces
- 1/2 cup soy sauce
- 1/4 cup Shaoxing wine
- 3 tbsp sugar
- 4 slices ginger
- 4 cloves garlic, minced
- 2 star anise
- 2 cinnamon sticks
- 3 cups water
- Green onions, chopped, for garnish
Instructions
- Heat a large pot over medium heat. Add the duck pieces and cook until browned on all sides.
- Add the soy sauce, Shaoxing wine, sugar, ginger, garlic, star anise, and cinnamon sticks to the pot. Stir to combine.
- Pour in the water and bring the mixture to a boil. Reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the duck is tender.
- Once the duck is cooked, remove the lid and allow the sauce to thicken for a few minutes.
- Transfer the braised duck to a serving dish, garnish with chopped green onions, and serve hot.
