Braised Duck with Yam (芋头焖鸭)
This traditional Fujian dish combines tender braised duck with the earthy sweetness of yam, creating a comforting and flavorful meal.
Ingredients
- 1 whole duck, cut into pieces
- 500g yam, peeled and cut into chunks
- 3 slices ginger
- 2 scallions, chopped
- 3 cloves garlic, minced
- 2 tablespoons Shaoxing wine
- 3 tablespoons soy sauce
- 1 tablespoon dark soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sugar
- 1 teaspoon salt
- 4 cups chicken broth
- 2 tablespoons vegetable oil
Instructions
- Heat vegetable oil in a large pot over medium heat. Add ginger, garlic, and scallions. Sauté until fragrant.
- Add duck pieces and brown on all sides.
- Pour in Shaoxing wine, soy sauce, dark soy sauce, oyster sauce, and sugar. Stir to combine.
- Add yam chunks and chicken broth. Bring to a boil, then reduce heat to low and simmer for 1.5 hours, or until duck is tender.
- Season with salt and adjust the flavor if needed.
- Serve hot and enjoy!
