Ingredients

  • 1 fish head, cleaned and halved
  • 300g firm tofu, cubed
  • 3 slices ginger
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp Shaoxing wine
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 2 cups chicken broth
  • 2 tbsp vegetable oil

Instructions

  1. Heat vegetable oil in a wok over medium heat. Add ginger and garlic, and stir-fry until fragrant.
  2. Add fish head and sear until lightly browned on both sides.
  3. Pour in soy sauce, oyster sauce, Shaoxing wine, sugar, salt, and white pepper. Stir to coat the fish.
  4. Add tofu and green onions, then pour in chicken broth. Cover and simmer for 30 minutes.
  5. Uncover and cook for another 10 minutes to reduce the sauce.
  6. Transfer to a serving dish and garnish with additional green onions, if desired.
