Braised Fish Head with Tofu (豆腐烧鱼头)
豆腐烧鱼头 (Braised Fish Head with Tofu) is a classic dish in Liaoning Cuisine, known for its rich flavors and tender fish meat.
Ingredients
- 1 fish head, cleaned and halved
- 300g firm tofu, cubed
- 3 slices ginger
- 2 cloves garlic, minced
- 2 green onions, chopped
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp Shaoxing wine
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 tsp white pepper
- 2 cups chicken broth
- 2 tbsp vegetable oil
Instructions
- Heat vegetable oil in a wok over medium heat. Add ginger and garlic, and stir-fry until fragrant.
- Add fish head and sear until lightly browned on both sides.
- Pour in soy sauce, oyster sauce, Shaoxing wine, sugar, salt, and white pepper. Stir to coat the fish.
- Add tofu and green onions, then pour in chicken broth. Cover and simmer for 30 minutes.
- Uncover and cook for another 10 minutes to reduce the sauce.
- Transfer to a serving dish and garnish with additional green onions, if desired.
