Braised Oxtail

Ingredients

  • 3 pounds oxtail
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cups beef broth
  • 1 cup red wine
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Season the oxtail with salt and pepper.
  2. Heat the vegetable oil in a large pot over medium-high heat.
  3. Add the oxtail and brown on all sides, then remove from the pot and set aside.
  4. Add the onion and garlic to the pot and cook until softened.
  5. Return the oxtail to the pot and add the carrots, celery, beef broth, red wine, and bay leaves.
  6. Bring to a simmer, then reduce the heat to low, cover, and cook for 3 hours or until the oxtail is tender.
  7. Remove the bay leaves and skim off any excess fat from the surface.
  8. Serve the braised oxtail hot and enjoy!
