Ingredients

  • 500g pork belly, cut into chunks

  • 1 tbsp Shaoxing wine
  • 3 slices ginger
  • 2 cloves garlic, minced
  • 2 star anise
  • 1 cinnamon stick
  • 3 dried red chilies
  • 1 tbsp sugar
  • 1 cup water

Instructions

  1. Blanch the pork belly in boiling water for 5 minutes, then drain and set aside.
  2. In a separate pot, heat some oil and sauté the ginger, garlic, star anise, cinnamon stick, and dried red chilies until fragrant.
  3. Add the pork belly to the pot and stir in the soy sauce, dark soy sauce, Shaoxing wine, and sugar.
  4. Pour in the water and bring the mixture to a boil. Then, reduce the heat, cover, and simmer for 1.5 to 2 hours until the pork is tender.
  5. Once the pork is tender, uncover the pot and allow the sauce to thicken.
  6. Serve the braised pork belly hot with steamed rice and enjoy!
