Ingredients

  • 500g pork belly, cut into chunks
  • 200g chestnuts, peeled
  • 3 slices of ginger
  • 2 cloves of garlic, minced
  • 2 green onions, chopped
  • 1 star anise
  • 1 cinnamon stick
  • 3 tablespoons soy sauce
  • 2 tablespoons Shaoxing wine
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon five-spice powder
  • 2 cups water

Instructions

  1. Blanch the pork belly in boiling water for 5 minutes, then drain and set aside.
  2. Heat a wok or large skillet over medium heat, add the pork belly and cook until browned.
  3. Add ginger, garlic, and green onions, and stir-fry for 2 minutes.
  4. Stir in the star anise, cinnamon stick, soy sauce, Shaoxing wine, sugar, salt, and five-spice powder.
  5. Pour in the water and bring to a boil, then reduce heat to low, cover, and simmer for 40 minutes.
  6. Add the chestnuts and continue to simmer for another 20 minutes until the pork is tender and the chestnuts are cooked through.
  7. Adjust the seasoning if needed, then serve hot.
