Ingredients
- 2 lbs pork belly, cut into chunks
- 4 cloves garlic, minced
- 1 in ginger, sliced
- 4-5 pieces dried tamarind pulp
- 2 cups water
- 3 tablespoons soy sauce
- 2 tablespoons palm sugar
- 1 teaspoon ground white pepper
- 2 tablespoons cooking oil
Instructions
- In a bowl, soak the dried tamarind pulp in water for 15 minutes. Squeeze the tamarind to extract the juice, then strain and set aside.
- Heat the cooking oil in a pot over medium heat. Add the minced garlic and sliced ginger, and sauté until fragrant.
- Add the pork belly chunks to the pot and brown them on all sides.
- Pour in the tamarind juice, soy sauce, palm sugar, and ground white pepper. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the pork simmer for 1.5 to 2 hours, or until the meat is tender and the sauce has thickened.
- Once the pork is tender, adjust the seasoning if needed. Serve the braised pork in tamarind sauce hot with steamed rice.
