Ingredients

  • 2 lbs pork belly, cut into chunks
  • 4 cloves garlic, minced
  • 1 in ginger, sliced
  • 4-5 pieces dried tamarind pulp
  • 2 cups water
  • 3 tablespoons soy sauce
  • 2 tablespoons palm sugar
  • 1 teaspoon ground white pepper
  • 2 tablespoons cooking oil

Instructions

  1. In a bowl, soak the dried tamarind pulp in water for 15 minutes. Squeeze the tamarind to extract the juice, then strain and set aside.
  2. Heat the cooking oil in a pot over medium heat. Add the minced garlic and sliced ginger, and sauté until fragrant.
  3. Add the pork belly chunks to the pot and brown them on all sides.
  4. Pour in the tamarind juice, soy sauce, palm sugar, and ground white pepper. Stir to combine.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the pork simmer for 1.5 to 2 hours, or until the meat is tender and the sauce has thickened.
  6. Once the pork is tender, adjust the seasoning if needed. Serve the braised pork in tamarind sauce hot with steamed rice.
