Braised Pork Intestines with Garlic Sauce (蒜泥炖肥肠)

Ingredients

  • 500g pork intestines, cleaned and cut into pieces
  • 4 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp ground white pepper
  • 2 cups water
  • 2 green onions, chopped
  • 1 piece ginger, sliced

Instructions

  1. In a pot, blanch the pork intestines in boiling water for 5 minutes. Remove and rinse with cold water.
  2. Heat some oil in a wok, add minced garlic and stir-fry until fragrant.
  3. Add the blanched pork intestines, soy sauce, dark soy sauce, Shaoxing wine, sugar, salt, and white pepper. Stir well to coat the intestines.
  4. Pour in water, add green onions and ginger. Cover and simmer over low heat for 2 hours until the intestines are tender.
  5. Once the intestines are tender, uncover the pot and continue to cook until the sauce thickens.
  6. Transfer to a serving dish and serve hot.
