Ingredients

  • 4 pork trotters, cleaned and chopped
  • 1 cup soy sauce
  • 1/2 cup dark soy sauce
  • 1/4 cup Shaoxing wine
  • 1/4 cup sugar
  • 6 slices ginger
  • 4 cloves garlic, minced
  • 2 star anise
  • 2 cinnamon sticks
  • 4 cups water

Instructions

  1. In a large pot, blanch the pork trotters in boiling water for 5 minutes. Remove and rinse with cold water.
  2. In the same pot, add soy sauce, dark soy sauce, Shaoxing wine, sugar, ginger, garlic, star anise, and cinnamon sticks. Stir to combine.
  3. Add the blanched pork trotters back into the pot. Pour in water until the trotters are fully submerged.
  4. Bring the liquid to a boil, then reduce the heat to low. Cover and simmer for 2 hours, or until the pork trotters are tender.
  5. Once the pork trotters are tender, uncover the pot and continue to simmer until the sauce thickens.
  6. Remove the pork trotters from the pot and serve hot.
