Ingredients
- 4 pork trotters, cleaned and chopped
- 1 cup soy sauce
- 1/2 cup dark soy sauce
- 1/4 cup Shaoxing wine
- 1/4 cup sugar
- 6 slices ginger
- 4 cloves garlic, minced
- 2 star anise
- 2 cinnamon sticks
- 4 cups water
Instructions
- In a large pot, blanch the pork trotters in boiling water for 5 minutes. Remove and rinse with cold water.
- In the same pot, add soy sauce, dark soy sauce, Shaoxing wine, sugar, ginger, garlic, star anise, and cinnamon sticks. Stir to combine.
- Add the blanched pork trotters back into the pot. Pour in water until the trotters are fully submerged.
- Bring the liquid to a boil, then reduce the heat to low. Cover and simmer for 2 hours, or until the pork trotters are tender.
- Once the pork trotters are tender, uncover the pot and continue to simmer until the sauce thickens.
- Remove the pork trotters from the pot and serve hot.
