Ingredients

  • 4 pork trotters
  • 1 cup soy sauce
  • 1/2 cup sugar
  • 3 slices ginger
  • 2 scallions, cut into 2-inch pieces
  • 1 tablespoon Shaoxing wine
  • 1 star anise
  • 1 cinnamon stick
  • 1 teaspoon Sichuan peppercorns
  • Water

Instructions

  1. Clean the pork trotters and cut them into pieces.
  2. In a large pot, combine soy sauce, sugar, ginger, scallions, Shaoxing wine, star anise, cinnamon stick, and Sichuan peppercorns.
  3. Add the pork trotter pieces to the pot and add enough water to cover the trotters.
  4. Bring the liquid to a boil, then reduce the heat to low and simmer for 2 hours, or until the trotters are tender.
  5. Once the trotters are tender, remove them from the pot and transfer to a serving dish.
