Ingredients

  • 12 large prawns, deveined and shells removed
  • 3 tablespoons cooking oil
  • 3 slices ginger
  • 3 stalks spring onion, cut into 2-inch lengths
  • 2 tablespoons Shaoxing wine
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 cup water

Instructions

  1. Heat the cooking oil in a wok over medium heat.
  2. Add the ginger slices and spring onion, and stir-fry until fragrant.
  3. Add the prawns and stir-fry for 1-2 minutes until they turn pink.
  4. Pour in the Shaoxing wine, soy sauce, sugar, salt, and water. Cover and simmer for 5 minutes.
  5. Uncover the wok and continue to cook until the sauce thickens.
  6. Transfer to a serving dish and garnish with additional spring onion if desired.
