Ingredients
- 12 large prawns, deveined and shells removed

- 3 slices ginger

- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 cup water
Instructions
- Heat the cooking oil in a wok over medium heat.
- Add the ginger slices and spring onion, and stir-fry until fragrant.
- Add the prawns and stir-fry for 1-2 minutes until they turn pink.
- Pour in the Shaoxing wine, soy sauce, sugar, salt, and water. Cover and simmer for 5 minutes.
- Uncover the wok and continue to cook until the sauce thickens.
- Transfer to a serving dish and garnish with additional spring onion if desired.
