Ingredients
- 2 sea cucumbers, rehydrated
- 3 scallions, chopped
- 3 slices of ginger

- 1 cup chicken broth
- 2 tablespoons vegetable oil

Instructions
- Prepare the sea cucumbers by cutting them open lengthwise and removing any innards. Rinse thoroughly and cut into bite-sized pieces.
- Heat the vegetable oil in a wok or deep skillet over medium heat. Add the ginger and garlic, and stir-fry until fragrant.
- Add the sea cucumbers to the wok and stir-fry for 2-3 minutes.
- Pour in the soy sauce, oyster sauce, and sugar. Stir to coat the sea cucumbers evenly.
- Add the chicken broth and bring to a simmer. Cover and cook for 1 hour, or until the sea cucumbers are tender.
- Season with salt and pepper to taste, then add the chopped scallions. Cook for an additional 2-3 minutes.
- Transfer to a serving dish and serve hot.
