Ingredients

  • 500g spare ribs, cut into small pieces
  • 3 potatoes, peeled and cut into chunks
  • 3 slices of ginger
  • 2 cloves of garlic, minced
  • 2 green onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1/4 tsp ground white pepper
  • 2 cups water

Instructions

  1. Heat some oil in a wok or large skillet over medium heat. Add the spare ribs and stir-fry until browned.
  2. Add the ginger, garlic, and green onions. Stir-fry for another minute.
  3. Pour in the soy sauce, dark soy sauce, and Shaoxing wine. Stir to combine.
  4. Add the potatoes, sugar, salt, and white pepper. Stir well.
  5. Pour in the water and bring to a boil. Then reduce the heat to low, cover, and simmer for 45 minutes to 1 hour, or until the spare ribs are tender and the potatoes are cooked through.
  6. Uncover and turn up the heat to thicken the sauce if desired.
  7. Serve hot and enjoy!
