Braised Tofu With Vegetables

Ingredients

  • 1 block of firm tofu, cubed
  • 1 cup sliced shiitake mushrooms
  • 1 cup sliced carrots
  • 1 cup broccoli florets
  • 1/2 cup sliced bell peppers
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 cup vegetable broth
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Salt and pepper to taste

Instructions

  1. Press the tofu to remove excess water, then cut it into cubes.
  2. Heat some oil in a large skillet or wok over medium heat. Add the tofu cubes and cook until golden brown on all sides. Remove from the skillet and set aside.
  3. In the same skillet, add a little more oil if needed. Sauté the garlic and ginger until fragrant.
  4. Add the mushrooms, carrots, broccoli, and bell peppers to the skillet. Cook until the vegetables are slightly tender.
  5. Return the tofu to the skillet and add the soy sauce, oyster sauce, sesame oil, and vegetable broth. Bring to a simmer.
  6. In a small bowl, mix the cornstarch and water to create a slurry. Stir the slurry into the skillet to thicken the sauce.
  7. Season with salt and pepper to taste. Serve hot over steamed rice.
