Ingredients

  • 1 lb salt cod
  • 2 lbs potatoes, peeled and diced
  • 4 garlic cloves, minced
  • 1 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Soak the salt cod in water for 24 hours, changing the water several times to remove the salt.
  2. Cook the salt cod in boiling water for 10 minutes, then drain and flake the fish.
  3. Cook the potatoes in a pot of boiling water until tender, then drain and mash them.
  4. In a separate pan, heat the olive oil and sauté the minced garlic until fragrant.
  5. Add the flaked salt cod to the pan and cook for a few minutes, then add the mashed potatoes and continue cooking, stirring constantly, until the mixture is smooth and creamy.
  6. Season with salt and pepper to taste.
