Brandenburg Wild Boar Roast (brandenburger Wildschweinbraten)

Ingredients

  • 2 kg wild boar roast
  • 3 onions, chopped
  • 4 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 bay leaves
  • 1 tbsp juniper berries
  • 1 tbsp allspice
  • 1/2 cup red wine
  • 4 cups beef broth
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 160°C (320°F).
  2. Season the wild boar roast with salt and pepper.
  3. In a large roasting pan, sear the wild boar roast on all sides over medium-high heat.
  4. Add the onions, garlic, carrots, celery, bay leaves, juniper berries, and allspice to the roasting pan.
  5. Pour in the red wine and beef broth.
  6. Cover the roasting pan with foil and place it in the oven.
  7. Cook for 3 hours, basting the roast with the pan juices every 30 minutes.
  8. Once cooked, remove the roast from the oven and let it rest for 15 minutes before slicing.
  9. Serve the wild boar roast with the vegetables and pan juices.
