Ingredients
- 2 kg wild boar roast
- 3 onions, chopped
- 4 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 bay leaves
- 1 tbsp juniper berries
- 1 tbsp allspice
- 1/2 cup red wine
- 4 cups beef broth
- Salt and pepper to taste
Instructions
- Preheat the oven to 160°C (320°F).
- Season the wild boar roast with salt and pepper.
- In a large roasting pan, sear the wild boar roast on all sides over medium-high heat.
- Add the onions, garlic, carrots, celery, bay leaves, juniper berries, and allspice to the roasting pan.
- Pour in the red wine and beef broth.
- Cover the roasting pan with foil and place it in the oven.
- Cook for 3 hours, basting the roast with the pan juices every 30 minutes.
- Once cooked, remove the roast from the oven and let it rest for 15 minutes before slicing.
- Serve the wild boar roast with the vegetables and pan juices.
