Brandenburger Königstorte (Brandenburg King's Cake)

Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup apricot jam
- 1/2 cup chopped almonds
- Confectioners' sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, cream the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract.
- Combine the flour, baking powder, and salt; gradually stir into the creamed mixture. Mix in the milk until the batter is smooth.
- Pour the batter into the prepared pan and spread it evenly. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
- Once the cake has cooled, spread the apricot jam over the top and sprinkle with chopped almonds. Dust with confectioners' sugar before serving.
