  • 1/2 cup apricot jam

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, cream the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract.
  3. Combine the flour, baking powder, and salt; gradually stir into the creamed mixture. Mix in the milk until the batter is smooth.
  4. Pour the batter into the prepared pan and spread it evenly. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  5. Let the cake cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
  6. Once the cake has cooled, spread the apricot jam over the top and sprinkle with chopped almonds. Dust with confectioners' sugar before serving.
