Ingredients

  • 4 whole branzino (sea bass), cleaned and scaled
  • 1 teaspoon saffron threads
  • 1 lemon, thinly sliced
  • 4 cloves garlic, minced
  • 4 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the stovetop grill or a large skillet over medium-high heat.
  2. In a small bowl, crush the saffron threads with a spoon and mix with 2 tablespoons of olive oil. Set aside.
  3. Season the inside and outside of the branzino with salt and pepper.
  4. Stuff each branzino with slices of lemon and minced garlic.
  5. Brush the outside of the fish with the saffron-infused olive oil.
  6. Place the branzino on the grill or skillet and cook for 5-7 minutes on each side, or until the fish is cooked through and has a golden crust.
  7. Remove from heat and drizzle with the remaining saffron-infused olive oil before serving.
