Ingredients

  • 2 lbs beef chuck, cut into 2-inch pieces
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 cup red wine
  • 2 cups beef broth
  • 2 bay leaves
  • 1 sprig rosemary
  • Salt and pepper to taste
  • 1 cup polenta
  • 4 cups water
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Season the beef with salt and pepper.
  2. Heat olive oil in a large pot over medium-high heat. Brown the beef in batches and set aside.
  3. Add the onion, carrots, and celery to the pot and cook until softened.
  4. Stir in the garlic and cook for another minute.
  5. Pour in the red wine, scraping up any browned bits from the bottom of the pot.
  6. Return the beef to the pot and add the beef broth, bay leaves, and rosemary.
  7. Bring to a simmer, then cover and cook on low heat for 2.5 to 3 hours, until the beef is tender.
  8. Meanwhile, bring 4 cups of water to a boil in a separate pot. Gradually whisk in the polenta and cook, stirring constantly, for 15-20 minutes until thickened.
  9. Stir in the Parmesan cheese and season with salt and pepper.
  10. To serve, spoon the polenta onto plates and top with the braised beef and its sauce.
