Bread Dumplings, also known as Semmelknödel, are a classic Austrian dish that is perfect for soaking up rich sauces and gravies. These delicious dumplings are made with simple ingredients and are a great way to use up stale bread.
Ingredients
- 4 cups stale bread, cubed
- 1 cup milk
- 2 eggs
- 1/2 cup all-purpose flour
- 1 small onion, finely chopped
- 2 tablespoons butter
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Place the bread cubes in a large bowl.
- In a small saucepan, heat the milk until hot but not boiling. Pour the hot milk over the bread cubes and let it sit for 10 minutes.
- In a skillet, sauté the chopped onion in butter until soft and translucent.
- Add the sautéed onion, eggs, flour, salt, and pepper to the soaked bread cubes. Mix until well combined.
- Form the mixture into 8 dumplings, using wet hands to prevent sticking.
- Bring a large pot of salted water to a simmer. Carefully drop the dumplings into the water and simmer for 15-20 minutes, or until they float to the surface.
- Remove the dumplings with a slotted spoon and serve hot.
