Ingredients
- 1 breadfruit, peeled and diced
- 1 can of coconut milk
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon chili flakes
- Salt to taste
- 2 tablespoons vegetable oil

Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Add the diced breadfruit to the pot and stir to combine with the onion and garlic.
- Pour in the coconut milk and stir well.
- Add the curry powder, turmeric, cumin, coriander, chili flakes, and salt to the pot, and stir to evenly distribute the spices.
- Cover the pot and let the curry simmer for 20-25 minutes, or until the breadfruit is tender.
- Once the breadfruit is cooked through, remove the pot from the heat.
- Garnish the curry with fresh cilantro before serving.
