Ingredients

  • 1 breadfruit, peeled and diced
  • 1 can of coconut milk
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon chili flakes
  • Salt to taste
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  3. Add the diced breadfruit to the pot and stir to combine with the onion and garlic.
  4. Pour in the coconut milk and stir well.
  5. Add the curry powder, turmeric, cumin, coriander, chili flakes, and salt to the pot, and stir to evenly distribute the spices.
  6. Cover the pot and let the curry simmer for 20-25 minutes, or until the breadfruit is tender.
  7. Once the breadfruit is cooked through, remove the pot from the heat.
  8. Garnish the curry with fresh cilantro before serving.
