Ingredients

  • 1 large breadfruit, peeled and diced
  • 300g prawns, peeled and deveined
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large pan or wok over medium-high heat.
  2. Add minced ginger and garlic, and stir-fry for 1 minute until fragrant.
  3. Add prawns and stir-fry for 2-3 minutes until they turn pink and opaque. Remove prawns from the pan and set aside.
  4. In the same pan, add more oil if needed and stir-fry the breadfruit until golden and tender, about 8-10 minutes.
  5. Add sliced bell peppers and onion, and stir-fry for 2-3 minutes until they are slightly softened.
  6. Return the prawns to the pan with the vegetables.
  7. In a small bowl, mix together soy sauce and oyster sauce, then pour over the stir-fry. Stir well to combine.
  8. Season with salt and pepper to taste.
  9. Remove from heat and serve the stir-fry hot, garnished with fresh cilantro if desired.
