Ingredients
- 1 breadfruit, peeled and diced
- 1 cup salted cod (saltfish), soaked and flaked
- 1 red onion, thinly sliced

- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Boil the diced breadfruit in salted water for 5-7 minutes until tender. Drain and let it cool.
- In a large bowl, combine the cooled breadfruit, flaked saltfish, red onion, tomato, bell pepper, and parsley.
- In a small bowl, whisk together the olive oil and lemon juice. Season with salt and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
