Ingredients

  • 1 large breadfruit, peeled and diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • 2 tablespoons oil
  • 2 cups water

Instructions

  1. In a large pot, heat the oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
  2. Add the curry powder, turmeric, cumin, and paprika to the pot, and stir for 1-2 minutes to toast the spices.
  3. Add the diced breadfruit to the pot and stir to coat it with the spices.
  4. Pour in the coconut milk and water, and season with salt. Bring the mixture to a boil, then reduce the heat and simmer for 20-25 minutes, or until the breadfruit is tender.
  5. Once the breadfruit is cooked, adjust the seasoning if needed, and then serve the breadfruit curry hot with rice or roti.
