Breadfruit Curry ('otai 'ulu)
Breadfruit Curry, also known as 'Otai 'ulu in Tongan cuisine, is a delicious and hearty dish that features the unique flavor of breadfruit combined with aromatic spices.
Ingredients
- 1 large breadfruit, peeled and diced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 can coconut milk
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- 2 tablespoons oil
- 2 cups water
Instructions
- In a large pot, heat the oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
- Add the curry powder, turmeric, cumin, and paprika to the pot, and stir for 1-2 minutes to toast the spices.
- Add the diced breadfruit to the pot and stir to coat it with the spices.
- Pour in the coconut milk and water, and season with salt. Bring the mixture to a boil, then reduce the heat and simmer for 20-25 minutes, or until the breadfruit is tender.
- Once the breadfruit is cooked, adjust the seasoning if needed, and then serve the breadfruit curry hot with rice or roti.
